And it’s not hard to pinpoint the appeal when you begin to appreciate its ability to stir something elemental in visitors, thanks to its vast landscapes and layered history that’s impossible not to fall head over heels for. From island-dotted lochs to sweeping moorland and sugarloaf peaks, Scotland is a country that rewards those willing to get off the beaten path a little and go beyond the best things to do in Edinburgh and Glasgow, wonderful as they are.

At the end of August, I zipped down to Bolivia for a highly anticipated stay at the new Casa Gaston on Uyuni’s Salt Flats. It had been over a decade since I was last in the country, even though I’m in the region regularly. Not only had it changed (the restaurant scene! The art scene! The chic new boutique hotels!), but so had I. I flew into La Paz, where I loved wandering the Villa Dolores market, which is still an explosion of Amazonian fruit and Andean herbs and sassy caseras (vendors, just as I remembered it. But then there were the new hot spots—I popped into Phayawi for lunch, and Arami for dinner—which use the country’s bounty of ingredients and heritage recipes in totally new ways.


Bolivia is consistently high altitude though (the La Paz airport sits at 16,000 feet above sea level, for starters), and incredibly dry as a result, so by the time we were roadtripping down to Uyuni, I had already developed a reliance on a 3-4x per day skin re-moisturizing regimen (using the Drunk Elephant Protini booster as a lifesaving add-on to my moisturizer), and lots of oil-forward hair care (thanks to a travel size kit from Roz that goes beyond the shampoo-conditioner basics). It was all worth it once we got to Uyuni, where the expanse of endless white salt was mesmerizing, exploding in color twice a day for sunrise and sunset—a timeless and reliable type of beauty.


Between resting my head at the stunning new hotel, Casa Gaston, I spent my days hiking volcanos and archaeological sites, or tramping across the salt flats themselves—which mean my trusty Blundstones were put to work, as were my cozy Paka socks, made with wool from alpacas just like the ones grazing nearby.
